Just picture this…it’s a lazy Sunday and you’re drained after a long week at work and slogging over the laundry, grocery shopping and other mundane tasks on Saturday and looking forward to relaxing in the lawn soaking in the pleasant sunshine when your bunch of friends pop-in screaming ‘surprise’! It’s nearing lunch time but the very thought of whipping up a full course meal for ‘the battalion’ makes you groan, doesn’t it! And well, takeaway isn’t as piping hot and fresh and nutritious as homemade is, right? So what do you do in such a scenario?

Simple…prepare Pizza Bianca…umm we mean our dear white cheese pizza! It’ll just take under an hour and will taste yummy too!

If you’re not familiar with white pizza, it’s a pizza made without tomato or marinara sauce, and topped with white cheeses. It’s also called Pizza Bianca. There’s a sophisticated, classy feel to it but it’s every bit as easy as traditional pizza, and the best part is that it’s completely customizable!

Ingredients

  • Black pepper (freshly ground) – 1/4 teaspoon
  • Dough for one large pizza
  • Dried oregano – 1/8 teaspoon
  • Dried thyme – 1/8 teaspoon
  • Fresh mozzarella (sliced very thinly) – 225 gram ball
  • Garlic cloves (minced) – 3
  • Kosher salt – 1/2 teaspoon
  • Olive Oil – 2 tablespoons
  • Pecorino Romano or parmesan cheese (freshly grated) – 1/3 cup
  • Ricotta cheese – 1/3 cup

For Optional Arugula Topping

  • Baby arugula greens – 2 cups
  • Lemon juice
  • Pepper – A pinch
  • Salt – A pinch

Method

  1. Take pizza dough and stretch to the desired size; then prebake in the oven at 425 degrees F for 5 minutes
  2. Remove from oven and brush with olive oil and minced garlic
  3. Mix ricotta, salt, pepper and herbs in a small bowl; spread this mixture into a thin layer across the pizza; layer with thin slices of fresh mozzarella, and half the pecorino cheese and; bake at 425 degrees F for 10-15 minutes, until the cheese has melted and is bubbly
  4. Remove from oven and sprinkle with remaining pecorino and crushed red pepper flakes (if desired)

Optional: Toss fresh arugula with lemon juice, salt and pepper and top this on the pizza just before serving
