A Step-by-Step Recipe to Easily Make Ice Cream Sandwich

Ice cream sandwich is everyone’s favorite whether kids or adults. And the best thing about ice cream sandwich is that it is very easy to make. So, here we have a step-by-step guide to prepare ice cream sandwiches. You can use any of your favorite ice cream flavors to prepare these classic sandwiches.

Ingredients

To make ice cream sandwiches, you need 1 cup of unsalted butter, 2 cups of chocolate chips, and 1 cup of granulated sugar. Moreover, you also need eggs, 1 teaspoon of vanilla, 2 cups of all-purpose flour, ½ cup of unsweetened cocoa powder. You also need 1 teaspoon of baking soda, ¼ teaspoon of salt, 8 cups or ½ gallon vanilla ice cream, and 1 cup chocolate chips (mini).

Note: For best ice cream storage, commercial ice cream freezer is recommended.

Instructions

Step 1: Preheat the Oven

The first step is to preheat the oven to 350°F. On the other side, take two rimmed baking sheets of 18×13-inch and line them with foil. Then spray the foil with non-stick cooking spray generously and keep it aside.

Step 2: Prepare the Dough

The second step is dough preparation. First, you need to prepare a chocolate mixture. Take a large microwaveable bowl and melt the mini chocolate chips and butter in it. Keep on stirring until you get a smooth and melted mixture. Then add sugar to the bowl and whisk. After that add eggs and whisk until eggs combine well. Then add vanilla and mix it too.

Take another medium-sized bowl and whisk dry ingredients including flour, baking powder, salt, and cocoa powder together. Then add the chocolate mixture you have prepared already into the bowl. Keep on stirring until you get a smooth and thick dough.

Now divide the dough equally in half and put it on the prepared baking sheets. With hands press the dough into the bottom of the sheet to form a thin layer. You should try to completely cover the bottom of the baking sheets with the layer of the dough.

Step 3: Baking

Place the baking sheets in the preheated oven and bake for 10 minutes. You need to rotate the sheets halfway through. After baking put the baking sheets on the wire rack and let them cool for at least 15 minutes. Once they are cool, place them in the freezer for 15 minutes.

Step 4: Beat the Ice Cream

Meanwhile, you can beat the ice cream. Use an electric mixer that has a paddle attachment to beat the ice cream. Beat it on low speed until you get smooth ice cream. Then stir in some chocolate chips.

Step 5: Prepare the Sandwiches and Freeze

After 15 minutes of freezing cookie sheets, remove them from the freezer. On one cookie sheet spread the ice cream evenly. Cover the cookie sheet completely with the ice cream. Then with the sides of the foil lift the second cookie sheet from the pan and place it over the first cookie sheet covered with a layer of ice cream. Then press the cookie sheet down gently.

Remove the foil that is on the top of the cookie sheet and cover it with a new piece of foil. Then place it back in the freezer for at least 2 to 3 hours.

Step 6: Cut the Ice Cream Sandwiches

Before cutting the ice cream sandwiches, place them on a flat surface and remove the foil you have placed before freezing. Now take a sharp knife and cut the ice cream sandwiches into a rectangular shape. If you make 2.25×4 inches sandwiches then you will get 21 sandwiches in total.

Step 7: Serving

Serve the ice cream sandwiches immediately after cutting. But if you don’t want to serve immediately then wrap every sandwich with plastic wrap tightly and put them in the freezer. Remove the sandwiches from the freezer just before serving.

Note:

You can also cut the sandwiches into circular form if you want. But cutting into rectangular form is easier. For the best-assembled sandwiches, place them in the freezer overnight.
